Description
This Amarone Classico from Valpolicella is the result of years and years of experimentation and research by the Allegrini company, which has developed its own production style that maximizes the fruit component. It is a quintessential example of tradition, territory, and farming knowledge.
It is mainly made from Corvina Veronese grapes, with additions of Corvinone, Rondinella, and Oseleta grapes, handpicked in the second week of September and left to dry in a special fruit drying room until December. The must ferments in stainless steel tanks at a controlled temperature of 18-22°C for 25 days. The wine matures in new barriques for 18 months and for an additional 14 months in the bottle before being released on the market.
Dark ruby red in the glass, it features scents of ripe red fruit and light spicy notes. On the palate, it is deep and full-bodied, with refined tannins that provide vigor and strength, leading to a velvety finish of pleasant persistence.
Perfectly matched with braised dishes and grilled red meats, it complements game, very aged cheeses, and all sweet and sour dishes of Asian cuisine.
