Description
The Auxey-Duresses by Labouré-Roi is a Pinot Noir from a small village located between Volnay and Meursault, in the heart of the Côte de Beaune. The vineyards cover only 170 hectares, on steep slopes facing east and southeast, at an average altitude of 250 meters. The very stony soils, composed of limestone marl, give the wines great freshness and aromatic finesse.
The grapes are hand-picked and manually selected upon arrival at the winery. After complete destemming, a cold maceration follows for four days at 8-10°C. The alcoholic fermentation lasts fifteen days, with daily punch-downs and pump-overs. The wine is then aged for 12 months in Burgundy oak barrels, 25% of which are new, and is finally gently racked and filtered before bottling.
It displays a bright ruby red color in the glass. The aromatic profile is typical of Pinot Noir, with notes of red fruits and nuances of liquorice. On the palate, it is elegant and well-balanced, with fine tannins and a harmonious finish, highlighting the wine's lightness and balance.
It pairs perfectly with grilled white meats, roast chicken, pork tenderloin, sautéed veal, or creamy cheeses.
