Description
This Barbaresco di Roagna originates from the Pajè cru, whose soils are rich in limestone marl. The vines that compose it have an average age that exceeds 40 years, with maximum peaks reaching 50 years.
Nebbiolo grapes are harvested in October, strictly by hand and through the use of small boxes. Fermentation is carried out by indigenous yeasts in wooden containers and the 5 years of maturation take place in neutral oak barrels.
At sight it shows a garnet red color, which introduces an olfactory complexity that is divided into very fine floral notes of violet and a still crunchy red fruit, inserted on a spicy and toasted background, a sign of prolonged refinement. In the mouth it confirms the great class, underlined by a decidedly velvety and fine tannin, intertwined with a very present flavor that sculpts the full body of this wine. It closes in a fascinating and persistent finish.
To be combined with second courses of red meat, even in rich preparations. We recommend the combination with the sirloin with Castelmagno sauce.
