Description
Barolo Castellero from the Giacomo Fenocchio winery is produced in the heart of the Barolo appellation, from a vineyard of just 0.8 hectares located at 280 meters above sea level on Tortonian soils, marly with tuff and a high sand content, which ensures natural drainage. The vines, about 30 years old, are west-facing and cultivated with Nebbiolo Michet and Lampia varieties.
The vinification follows the traditional method with long maceration: fermentation occurs spontaneously, without added yeasts, for about 40 days in stainless steel tanks. The wine then matures for six months in steel, and subsequently ages for 30 months in large Slavonian oak barrels, before continuing to evolve in the bottle until it is marketed.
It presents an intense garnet color to the eye. The nose opens with floral and fruity aromas, enriched by notes of roots, licorice, sweet spices, and jam. On the palate, it is a wine of great character, with well-persistent tannins, harmonious and velvety, able to offer excellent taste depth and a long and elegant finish.
Perfect pairing with red meats, game, and aged cheeses.
