Description
What kind of wine is it?
Barolo Cerequio by Michele Chiarlo is a red wine made exclusively from Nebbiolo grapes grown in Piedmont. Characterized by a solid flavor structure, this wine reflects the characteristics of its area of origin and offers a structured and elegant profile. The vinification process involves meticulous fermentation with skin maceration, followed by a slow and careful aging that ensures this label has a notable capacity to evolve over time, delivering an intense aromatic profile.
Where does it come from?
This Barolo originates from vineyards located in the municipality of La Morra, in the province of Cuneo. The grapes are grown within the historic Cru Cerequio, considered an essential benchmark for the entire Barolo denomination. Michele Chiarlo's interpretation enhances the precise origin of this subzone, closely linked to the selection of dedicated plots that give the wine a well-defined identity. The strong bond with the hills of this area ensures a deep territorial expression that is faithfully reflected in the glass.
How is it produced?
Production begins with hand-harvesting the grapes, followed by fermentation in oak vats at a controlled temperature between 27 and 30 degrees Celsius for a period of fifteen days. This phase allows for the extraction of structure and complexity during contact with the skins. Afterwards, the wine matures in medium-capacity oak barrels for twenty-four months, acquiring further balance. The process concludes with bottle aging for fifteen or sixteen months before being released to the market.
Tasting notes
In the glass, it displays a garnet red color, destined to develop slight orange hues as the years pass. The nose opens with clear aromas of red fruit, with cherry standing out, accompanied by floral scents of violet and elegant undertones of vanilla and licorice. On the palate, it offers a balsamic sip, supported by a structure true to the character of the grape. The long finish recalls the spicy sensations developed during aging.
Food pairings
The great structure of this red naturally pairs with red meat dishes, supporting rich and succulent fare thanks to its tannins and depth of flavor. It is also suitable for aged cheeses, whose savoriness it can balance. A classic match like Barolo-braised beef fully enhances its identity, while a selection of mature Piedmontese cheeses brings out the notes of licorice and vanilla present in the glass.
When to serve it
This label proves to be the right choice for structured tables and moments of togetherness focused on flavorful dishes. Its ability to evolve over time makes it a highly captivating red, capable of offering new aromatic shades even after proper bottle aging. When served with main courses, it allows one to appreciate the depth and enveloping character obtained from its long maturation journey between wood and glass.
