Description
The Barolo from the Collezione del Conte of Villa da Filicaja is made from a selection of grapes sourced from several towns in the Barolo area, including Castiglione Falletto, Cherasco, Diano d'Alba, Verduno, and Grinzane Cavour.
It is produced solely with Nebbiolo grapes, harvested exclusively by hand in October and fermented with maceration for 14-16 days at a controlled temperature of 28-30°C. After completing malolactic fermentation, the wine undergoes aging for 38 months in mixed oak barrels, of which at least 18 months are in French oak barrels.
Intense garnet with orange highlights in appearance, it explodes on the nose with an elegant floral bouquet of violets, sprinkled with notes reminiscent of small red fruits and leather. On the palate, it is structured and harmonious, pleasantly soft and persistent.
Recommended in the company of mushroom-based first courses, it is perfect with typical Piedmontese cheeses and Alba white truffle. Try it paired with a stew or game.
