Description
What type of wine is it
Barolo Percristina by Domenico Clerico is a red wine made from Nebbiolo, produced from a selection of grapes. It is crafted in a structured and complex style, with a clear propensity for ageing thanks to long maceration on the skins and extended maturation in wood.
Where does it come from
The grapes come from an old vineyard located in the Mosconi cru in Monforte d’Alba, chosen for its southern exposure and the quality of its plots. The soils consist of Sant’Agata marls, a distinctive element of the area that contributes to a solid and deep profile.
How is it made
Vinification involves a long maceration on the skins. After fermentation, the wine matures for more than five years alternating between barrique and large oak casks, with specific times to support structure and aromatic complexity. It then continues ageing and is released on the market after a very long wait.
Tasting notes
On appearance, it shows a garnet colour. On the nose, it offers developed aromas with floral hints, nuances of herbs, spices, and berry notes. On the palate the sip is powerful and structured, with a long development and marked taste persistence.
Food pairing
It pairs well with braised game and slow-cooked beef, where its structure and persistence accompany long cooking times and intense flavours. It is a suitable choice when the dish calls for a red wine that can match texture and aromatic depth.
When to serve it
This is a Barolo designed to be appreciated after a long maturation process, in situations where a red wine of great structure and a complex profile is desired. The prolonged ageing in wood and late release define its vocation for evolution in the bottle over time.
