How it is produced

Once the malolactic fermentation is complete, maturation continues in French oak barrels and, to a small extent, in second-passage barriques for twenty-four months. After this time in wood, bottling takes place. The red then refines for a further twelve months in the Prunotto cellars, a lengthy and meticulous process to establish the proper balance of its velvety texture.
