Barolo Sottocastello di Novello DOCG 2015 Le Ginestre

Barolo from the precious Sottocastello di Novello cru, facing south-south east, with medium-textured limestone soil of good depth, in which Nebbiolo takes root and develops in an excellent way.

It is obtained from a fermentation with prolonged maceration in contact with its skins, with a vinification carried out with a submerged cap to increase extraction and stabilize the color thus obtained. After the malolactic fermentation in steel, the wine continues with an aging in oak barrels for 24 months and then stops for another 12 months in the bottle in order to perfect its organoleptic preciousness.

Intense ruby red in color with light orange reflections, it offers a wide and complex aromatic range, in which the prevailing notes of violet mix with sweet spices such as vanilla, cinnamon, tobacco and licorice. On the palate it is structured and dry, with a pleasantly spicy persistent finish.

Noble and long-lived, it goes very well with game dishes or truffle-based dishes. It is indicated to accompany refined chocolate bars or as a meditation wine.
