Description
The Beaune Premier Cru Pertuisots by Labouré-Roi originates in the southern part of the Beaune appellation, close to the famous Clos des Mouches. The vineyard "Les Pertuisots" is characterized by light soils composed mainly of marl and limestone, ideal for producing Chardonnay with great elegance.
The winemaking process includes a gentle pressing of the whole grapes for two and a half hours, followed by spontaneous alcoholic fermentation with indigenous yeasts directly in barrels, without riddling, to preserve as much of the fine lees as possible. The fermentation can last up to 10 months. The aging continues for 17 months, always in barrels (25% of which are new), without bâtonnage or racking, to enhance the wine's natural minerality and achieve a slight boisé note.
The color is bright straw yellow. On the nose, it stands out for its aromatic complexity with floral scents and a subtle touch of wood. On the palate, it is balanced between richness and minerality, with extraordinary persistence that confirms its refinement and potential for evolution.
It pairs perfectly with elaborate appetizers, poultry in sauce, veal blanquette, or river fish.
