Description
Valtuille La Cova de la Raposa is a red wine originating from a micro-parcel of just 0.2 hectares located in the upper, sandy part of the area bearing the same name. This south-facing zone is one of the most expressive in Valtuille, and its yield is extremely low, with some vines producing only two clusters. The wine purely expresses the character of the paraje after which it is named.
The grapes are harvested by hand and fully vinified in open vats. Fermentation is spontaneous, with no added yeasts or temperature control. The wine macerates for about 60 days, with daily cap wetting performed by gravity. After a resting period, it ages for a year in used barrels before bottling.
On the nose, it opens with intense aromas of dark fruit, licorice, spices, and earthy notes. The palate is concentrated and refined, with an elegant structure, fine tannins, and a long, mineral finish that faithfully reflects its sandy origin.
Perfect with roast lamb, rich stews, or spicy meat-based dishes.
