What kind of wine is it
Villa de Corullón by Descendientes de Jose Palacios is a red wine made from Mencia grapes from Bierzo. It boasts a solid structure and an aromatic complexity that reflects the potential of very old vines, between 50 and 90 years of age. Fermentation in wood allows for a fine extraction of aromas and tannins, while 15 months of ageing in French oak barrels enriches its profile with ripe red fruit, spice, and balsamic hints. Prolonged maceration supports a balanced and profound sip.
Where it comes from
The wine is produced in the Bierzo region, northwest of Castilla y León. Soils rich in slate and quartz ensure good drainage and impart marked minerality to the wine.
How it's made
The Mencia grapes are selected and, after partial destemming, are fermented in wood for 32 days, with careful tannin extraction. Malolactic fermentation continues in wood, followed by 15 months in French oak barrels. This process helps preserve aromatic integrity and structure.
Tasting notes
In the glass, the colour is an intense purple with violet reflections. On the nose, ripe blackberry and plum emerge, followed by bitter cocoa, dried lavender, and incense, with earthy nuances. On the palate, medium acidity balances with silky tannins, offering a compact sip dominated by red fruits, spice, and balsamic notes. The finish is long, with a mineral aftertaste and a subtle warmth.
Food pairings
This wine pairs well with semi-aged cheeses and cured meats, as its structure and spice balance out their richness. Excellent with grilled meats such as pork ribs and beef steaks, it also adapts to braised game and roast chicken. It accompanies legume-based and smoked meat dishes, enhancing creaminess and aromas.
