Description
What kind of wine it is
Sassicaia by Tenuta San Guido is a Bolgheri red made from Cabernet Sauvignon and Cabernet Franc. It is structured and complex, with fine tannins and a well-defined freshness that gives lift to the palate. It shows balance and precision, with a harmonious progression and a remarkable capacity to evolve over time.
Where it comes from
Sassicaia is born at Tenuta San Guido, in Bolgheri along the Tuscan coast. The vineyards lie between 100 and 400 meters above sea level with western and south-western exposures, in a setting marked by a Mediterranean climate and constant breezes. The soils, rich in limestone, galestro and stony components, promote even ripening and contribute to aromatic complexity, structure, and the definition of the flavor profile.
How it is made
The harvest is carried out by hand with careful selection of the bunches. Fermentations take place in stainless steel at controlled temperature with indigenous yeasts, while macerations are managed to obtain a balanced extraction of color and tannins. During the process, frequent pump-overs are performed to encourage oxygenation and support yeast activity. Aging takes place in barrique for about 24 months, using barrels of different ages, followed by additional time in bottle, which helps integrate the components and broaden the aromatic profile, giving the wine depth and longevity.
Tasting notes
On appearance it shows a deep purple-red color with violet highlights. The nose opens with notes of sage and rosemary alongside dark fruit, mineral impressions, floral and spicy hints with citrus nuances. On the palate it is supple and harmonious, with well-integrated chalky tannins and a lively freshness that supports the structure, leading to a long, clean and persistent finish.
Food pairings
Sassicaia pairs well with grilled red meats, such as bistecca alla fiorentina, and with beef braises. It also shows affinity with wild boar stew, a Tuscan dish that highlights its tannic texture and spicy aromas. Beef roasts with Mediterranean herbs work well, as the richness of the jus balances the tannic component. These combinations enhance its structure and depth of flavor.
When to serve it
Sassicaia expresses its best qualities after proper cellaring, when it reaches elegance and harmony. It suits important occasions and tasting sessions focused on the evolution of the bouquet and the tannic texture. Even in its youth it offers satisfying drinkability thanks to the silkiness of the tannins; over time it develops tertiary notes and greater integration.
