Description
This Brunello di Montalcino from San Polo, a winery owned by Marilisa Allegrini located in Montalcino, is made from Sangiovese grapes cultivated in the historic vineyards of the estate situated at about 450 meters of altitude, facing South, Southeast, and Southwest. The soils, characterized by a composition rich in calcium and clay, provide the wine with structure and longevity. The vines, trained on spurred cordon, are rooted in installations dating back to the 1990s and 2000s, ensuring high-quality and complex grapes.
The vinification involves gentle crushing of the grapes, preceded by a rigorous manual selection of the berries. Alcoholic fermentation takes place in cement tanks at a controlled temperature between 28 and 30°C for about 20-22 days. Subsequently, the wine completes malolactic fermentation in oak barrels. The aging continues for 30 months in large oak barrels of different capacities, followed by at least 6 months of rest in the bottle before commercialization.
In appearance, it exhibits an intense ruby red color with garnet reflections, clear and bright. The olfactory profile is fine and complex, dominated by floral scents of violet and red fruits, with additional notes of underbrush, aromatic wood, delicate vanilla, jam, and a hint of coffee. On the palate, it is warm, with a dense and full-bodied texture, supported by well-integrated tannins and a long, elegant finish. The overall balance highlights its inclination towards aging and its ability to evolve over time.
It pairs perfectly with red meats, game birds or furred game, possibly enriched with mushrooms or truffles, or with aged cheeses like tomes, Parmigiano Reggiano, and Tuscan pecorino.
