Description
This box brings together two red wines from Valpolicella by the winery Dal Moro. Both come from Corvina Veronese, Corvinone and Rondinella grapes grown on the hills around Negrar, yet they have two different characters. On the one hand there is Amarone della Valpolicella, a rich, structured red. On the other, Valpolicella Ripasso, more easy-drinking but with lovely aromatic depth.
For the Amarone, the best clusters rest in the drying loft for about 120 days of appassimento. Then they are vinified in stainless steel and the wine ages for 24 months in barrique. In the glass it is an intense garnet red. On the nose it shows ethereal notes of spirit-soaked morello cherry and dried plum, and on the palate it is supple, with silky tannins. It pairs with grilled red meats, braises and long-aged cheeses.
The Ripasso takes its name from its method. The base wine macerates a second time on the Amarone pomace, which starts a new fermentation that gives it more body. It then ages for a long time in wood. It is a deep ruby red, with aromas of red fruit and spices. On the palate it is velvety and fresh. It goes well with flavorful first courses and with meat main courses.
This box reveals the two sides of Valpolicella. Ripasso is the easygoing red to bring to the table every day, Amarone is a wine for contemplation on special occasions. It’s a gift idea that’s perfect for those who love wine, and also a way to add to your cellar two labels that authentically express the Veronese hills.
