Description

Non Plus Ultra Reserva is a traditional cava from D.O. Cava, produced by Codorníu with classic Macabeu, Xarel·lo and Parellada varieties sourced from vineyards in the Penedès region. This sparkling wine represents one of the most historic expressions of cava, born at the end of the 19th century and appreciated for its elegance, balance, and faithfulness to tradition. The Mediterranean climate of the area promotes early grape ripening, preserving freshness, acidity, and aromatic finesse.

Vinification involves separate fermentation of the musts from each variety after destemming and gentle pressing. The base wine is then blended and, after adding the liqueur de tirage, bottled to start the second fermentation according to the traditional method. The bottles then mature on their lees in underground cellars at a constant temperature for a long period, developing complexity and structure before disgorgement and the addition of the liqueur d’expédition to determine the Brut dosage.

It shows a pale, elegant color and a fine, persistent perlage. The nose offers a fresh, clean bouquet with notes of citrus, apple, and almond blossom, accompanied by hints of dried fruit, honey, and light toasty nuances due to aging on the lees. The palate is creamy and elegant, with pleasant freshness and long persistence.

Perfect to enjoy on its own or paired with white meats, cold appetizers, carpaccio, seafood salads, or dishes with dried fruit.
