Description
Panot Gaudí Pinot Noir Rosé is a Cava that pays tribute to Catalan modernism and the identity of Barcelona, reinterpreting in the design of its label the famous "panot" inspired by the works of Antoni Gaudí. Produced by the historic Cavas Hill winery, founded in 1887 and among the oldest in the denomination, this sparkling rosé is made from Pinot Noir grapes sourced from selected vineyards in the Alt Penedès, a particularly suited territory that gives the wine elegance, freshness, and a pronounced aromatic expression.
The grapes are handpicked at optimal ripeness and subjected to a short cold maceration to extract the delicate pink color and preserve the varietal finesse. The base wine ferments in stainless steel tanks and later, following the traditional method, undergoes a second fermentation in the bottle with a long aging on the lees in the underground cellars of the winery, a process that helps develop greater complexity, finesse, and elegance.
In the glass, it shows a pale, bright, and elegant pink color. The bouquet is intense and fragrant, with fresh small red fruit aromas such as raspberry and cherry accompanied by delicate floral nuances. On the palate, it is fresh and fruity, balanced and dynamic, supported by a lively acidity that gives it precision and lightness; the finish is long, harmonious, and refined, with subtle hints of red fruits.
It pairs perfectly with appetizers, fish and seafood dishes, sushi, carpaccio, fresh cheeses, and red fruit-based desserts.
