Where it comes from
The production area is located in the municipality of Cebreros, where the vineyards are spread across five historic plots near the Arrebatacapas pass. The vines grow at over 950 meters above sea level and root in soils composed of slate and metamorphic rocks. This particular geological formation and altitude give the wine a marked minerality and precise fruit definition, distinctive characteristics of viticulture in the Sierra de Gredos.
How it is produced
The grapes come from very low-yielding plants that follow organic practices and are vinified using indigenous yeasts to preserve varietal authenticity. The process continues with a long aging in French oak barrels, selected from different forests, lasting between 24 and 30 months. This maturation aids in integrating the components, giving the wine greater depth and structural complexity.
