Description
The Chablis from Maison Ropiteau Frères comes from the marls of Courgis, south of the village of Chablis, within the designated areas of 17 municipalities. This territory, completely separate from the rest of Burgundy, is characterized by a unique terroir composed of Kimmeridgian marls rich in marine fossils, which give the wine its typical minerality and freshness.
The wine is made from Chardonnay grapes vinified in thermoregulated stainless steel tanks. To maintain vivacity and aromatic purity, malolactic fermentation is carried out quickly. A small portion of the wine is aged in barrels to add complexity and depth without covering the varietal characteristics.
It presents a pale gold color, brilliant and crystalline to the eye. The nose is extremely elegant, with predominant notes of fresh fruit such as apple, pear, and blackberry, accompanied by a slight touch of wood. On the palate, it is rich and well-balanced, with aromas of apple and honey.
Perfect with oysters, fish, poultry, some exotic cuisines such as Japanese or Indian, and goat cheeses.
