Description
This Brut Nature is a sparkling wine made from grapes grown on a north-facing clay-limestone terroir. The estate was established in 1946 by the winegrowers of Chavot-Courcourt. Chavost is the ancestral name of the village, located between the church of Saint-Martin and the hill of Mont-Félix, where a castle once stood. This label is part of the range of Champagnes with no added sulfites.
The wine is made 100% from Meunier, using 100% of the cuvée (the first pressing of the grapes). Vinification is entirely carried out in stainless steel tanks at controlled temperature, without the addition of sulfites and with a settling process free from enzymes, tannins, or charcoal. No chaptalization is carried out; spontaneous alcoholic fermentation occurs at 17°C with indigenous yeasts, and spontaneous malolactic fermentation takes place at 20°C with indigenous bacteria.
On the nose, it is delicately fruity and elegant, with notes of small red fruits, apple, pear, and white flowers. On the palate, it is very vinous, with great breadth, and on the retro-olfaction, the fruity notes detected on the nose reappear, with remarkable finesse and persistence.
Perfect to enjoy on its own or paired with refined seafood and fish dishes, fresh cheeses, and light appetizers.
