How it is made

The process concludes with disgorgement, taking place at least six months prior to release, and the addition of a Brut dosage ensuring perfect balance between fresh vigor and roundness.

In the glass, it appears yellow with slight amber reflections, adorned with abundant foam and a fine, persistent perlage. On the nose, it opens with aromas of green apple and pear, then evolves towards pastry scents and complex hints of moss, tobacco, clove, and vanilla. The palate is broad and enveloping, led by clear sensations of baked fruits and quince that provide volume and continuity. The sip finishes clean, marked by a spicy finish reminiscent of ginger.
Food pairings
At the table, it pairs exceptionally well with flavorful dishes, where the structure of Pinot Noir and the balance of the Brut style complement bolder textures. It finds an ideal match with herbed ham shank, a pairing that enhances its broad palate and spicy edge.
