Description
Sigma Champagne by Valentin Leflaive is a Blanc de Blancs made from Chardonnay grapes sourced from various crus in the Côte des Blancs, including Cramant, Chouilly, Oger, Le Mesnil-sur-Oger, and Avize. The vineyards, situated on clay-limestone and chalky soils with a southeast exposure, help to express the richness and complexity of the terroir.
The harvest is done by hand and followed by fractional pressing to select the best portions of the must; fermentation occurs both in stainless steel and oak barrels with a significant presence of reserve wines, while extended aging on the lees gives it structure, finesse, and depth.
It boasts a bright, luminous color; the nose is fresh and elegant with notes of white fruit, citrus such as yuzu, flowers like jasmine, and shades of honey and acacia; the palate is creamy and enveloping, with a fine texture and a long, savory finish marked by pronounced minerality.
Ideal with refined fish dishes, raw seafood, and light preparations with an aromatic profile.
