Description
The Chardonnay Barrell Fermented by Bergsig is a white wine from the Breede River Valley in South Africa, cultivated at an altitude between 240 and 350 meters above sea level. The vineyard benefits from a Mediterranean climate with cold, snowy winters lasting until late spring, which slow down ripening and preserve the natural acidity. The soil, influenced by the Worcester fault, consists of altered sandstones and variable sediments, providing a rich mineral quality to the wine.
The grapes, harvested at full maturity in March, are gently pressed and only the free-run juice is fermented in 300-liter barrels of first, second, and third passage. The wine is aged in wood for six months before bottling, developing greater structure and complexity.
On the nose, fresh citrus notes, caramel butter, and sweet spices derived from oak are distinguished. On the palate, it is soft and round, with good acidity that gives freshness and zest. The creamy structure harmonizes with vanilla aromas and a delicate mineral vein that accompanies a balanced and persistent finish.
Ideal with sushi, creamy pasta dishes, and aged cheeses.
