Description
The Chassagne-Montrachet Premier Cru by Maison Ropiteau Frères originates from the Côte de Beaune, in the Côte d’Or department, and is produced from plots located in the communes of Chassagne-Montrachet and Remigny. The area, situated between 220 and 325 meters above sea level, is composed of steep slopes rich in Argovian marl, Bathonian limestone, and stony soils, ideal for the expression of the Chardonnay grape variety.
The grapes are hand-picked and selected, then gently pressed in a pneumatic press to obtain a high-quality must. Fermentation and aging take place in barrels, 20% of which are new, with a resting period on fine lees lasting from 10 to 15 months, accompanied by periodic bâtonnage to enhance the flavor profile.
In appearance, it is a bright golden color. The bouquet is floral, with aromas of hawthorn, acacia, and honeysuckle, enriched by notes of verbena, hazelnut, and flint. On the palate, it is opulent, round, and rich, with an enveloping structure and very long persistence.
It pairs well with white meats in sauce, lobster, shrimp, Asian cuisine dishes, and cheeses like Comté.
