Description
The Chenin Blanc from Off the Record is a white wine of great character produced in the cool region of Elgin, South Africa, from a small batch of selected grapes. This label was born as a passion project of Bobby Wallace and represents a rarity for the Elgin district, with a very limited production that enhances the purity and typicity of Chenin Blanc grown in a cool climate.
The winemaking process includes spontaneous fermentation with no added enzymes or yeasts, followed by ten months of aging in French oak barrels of first, second, third, and fourth passage. The wine underwent partial malolactic fermentation in barrels, with no use of clarifying agents, aiming to maintain the integrity and authentic expression of the grape variety and the terroir.
It has a light and bright straw yellow color. On the nose, intense citrus notes emerge, which are also found on the palate, enriched by a creamy texture, marked minerality, and a subtle integration of wood. This ensemble gives the wine complexity and depth, culminating in a long and persistent finish.
It pairs perfectly with shellfish, grilled fish dishes, and fresh cheeses.
