How it is produced
Harvesting is manual in early October. Fermentation takes place in stainless steel tanks at a controlled temperature, with maceration on the skins for about 25 days to extract color, tannins, and aromatic components. This is followed by 24 months of aging, partly in French oak tonneaux and partly in concrete, completed by a further 6 months in the bottle.
Tasting notes
Deep ruby red to the eye. On the nose, it expresses an intense and complex bouquet, with fruity hints of morello cherry and cherry, followed by tobacco and cocoa, nuances of black pepper, and balsamic and mineral notes. On the palate, it is structured and powerful yet refined and elegant, with evident savoriness and smooth, velvety tannins. The sip extends into a persistent, coherent, and continuous finish.
