Description

What kind of wine is it

Chianti Classico Gran Selezione Vigna del Capannino Bibbiano is a red wine from Chianti Classico produced in Castellina in Chianti, Tuscany. Made from Sangiovese Grosso, it offers a structured and precise style, with a clear savory character. Fermentation takes place in stainless steel at a controlled temperature with skin maceration, followed by an extended aging in oak, concrete, and bottle, intended to enhance its complexity and definition.

Where does it come from

The grapes originate from vineyards in Castellina in Chianti, in the heart of Chianti Classico. The designation Vigna del Capannino indicates a specific origin within the municipal territory and contributes to a profile centered on aromatic intensity and complexity. The connection with the Chianti Classico area results in a balance between structure, freshness, and savoriness, in line with the wine’s character.

How it is produced

Harvesting is manual in early October. Fermentation takes place in stainless steel tanks at a controlled temperature, with maceration on the skins for about 25 days to extract color, tannins, and aromatic components. This is followed by 24 months of aging, partly in French oak tonneaux and partly in concrete, completed by a further 6 months in the bottle.

Tasting notes

Deep ruby red to the eye. On the nose, it expresses an intense and complex bouquet, with fruity hints of morello cherry and cherry, followed by tobacco and cocoa, nuances of black pepper, and balsamic and mineral notes. On the palate, it is structured and powerful yet refined and elegant, with evident savoriness and smooth, velvety tannins. The sip extends into a persistent, coherent, and continuous finish.

What it pairs with

It pairs well with flavorful first courses and grilled red meats, where its structure and tannic texture complement the juiciness and intensity of the dishes. It’s also suitable with semi-aged cheeses, thanks to its savoriness and persistence that support the richness and maturation of the cheese.

When to serve

This red is ideal for lunches and dinners featuring structured dishes, whenever you’re looking for a match that can stand up to grilled meats and hearty first courses. The combination of extended maceration and aging in wood, concrete, and bottle also makes it suitable for tasting moments when you want to appreciate complexity and aromatic definition, as well as for important meals.
