Description
The Chianti Classico Vallenuova di Tolaini was born in vineyards located in the Sienese municipality of Castelnuovo Berardenga, in Tuscany.
It is produced entirely with Sangiovese grapes, manually harvested and subjected to a double selection of perfectly intact grapes to be fermented. The must ferments partly in steel tanks and partly in wooden vats at controlled temperature for 20 days. After malolactic fermentation, the wine ages for 10 months in wood, 4 of which on the fine lees, for 2 months in steel and finally in bottle for another 2 months, before being released on the market.
It has an intense ruby red color. The nose opens with elegant hints of cherry and black cherry, enriched with pleasant notes of tobacco and licorice. On the palate it is rightly tannic and fruity, with a fresh and juicy finish, with a pleasant crunchiness and structure.
Perfect to accompany red meats and game, this wine is ideal in combination with aged cheeses.
