Collio Doc Sauvignon 2016 Pighin
Description
Sauvignon di Pighin was born on the estate of the Friulian company in Spessa di Capriva, in the province of Gorizia, in the heart of the famous Collio area.
This wine, made exclusively from Sauvignon Blanc grapes, harvested in early September, is left to ferment in stainless steel containers for 20 days at controlled temperatures. The storage takes place in the cellar, always in steel, and then goes through the conservative phase in cold rooms, until bottling.
Sauvignon di Pighin has a beautiful straw yellow color, with soft greenish reflections. The nose offers typical aromas of yellow pepper and sage, with refined notes of vanilla, elderberry and peach, which give a beautiful aromatic complexity, In the mouth it shows a good structure, with an excellent savory vein and a marked acidity that make it a wine quite long-lived.
Excellent with vegetable soups and soufflés or pies, it also goes very well with dishes based on eggs or asparagus.
