The Sauvignon by Tenuta Villanova is a white wine made from Sauvignon grapes grown in the Collio, in Friuli Venezia Giulia. The winemaking includes maturation split between stainless steel and oak tonneaux, enhanced by a carefully managed period of batonnage. This technical approach shapes a precise profile in which the fresh, aromatic style gains solid structure and depth. The result is a glass of notable intensity, saline and fragrant, perfect for accompanying meals with great balance.
Where it comes from
The grapes come from vineyards located in the Collio, a renowned hilly area of Friuli Venezia Giulia devoted to producing substantial white wines. Here, the Eocene-origin soils are characterized by marl-sandstone flysch, locally known as “ponca”. This particular substratum ensures consistent ripening and lends the wine a distinctly saline signature. The geological features delineate a clean-cut aromatic profile, expressed through clear-cut fruit and distinctive herbal and floral impressions.
How it's produced
Harvesting is carried out exclusively by hand, with a careful selection of the clusters destined for varietal vinification. The maturation employs stainless steel vessels, ideal for preserving the natural freshness of the variety, alongside oak tonneaux that add volume on the palate. During maturation, the practice of batonnage is applied, keeping the lees in suspension to increase palate complexity. This production approach combines purity and intensity to safeguard varietal definition.
Tasting notes
In the glass the wine shows a yellow color with pale green highlights, heralding clear freshness. On the nose, it reveals a broad, dynamic bouquet, with floral and herbal hints featuring aromas of wild mint and elderflower. On the palate it is full, saline and highly fragrant, supported by an excellent balance between intensity and verve. The finish extends the aromatic continuity and leaves a pleasant, persistent sense of purity.

This white naturally accompanies seafood cuisine and vegetable-based preparations thanks to a profile that enhances its fragrance and salinity. It pairs perfectly with creamy soups, lightly spiced dishes and roasted fish. In reference to Friulian tradition, it finds an ideal match with the classic asparagus risotto, a regional recipe that highlights the wine’s herbal profile.
