Description
The Conero Cúmaro Riserva by Umani Ronchi is produced from vineyards located in the municipality of Osimo, in the province of Ancona. It is made exclusively from native red grapes, harvested solely by hand during the second decade of October.
Fermentation takes place in stainless steel tanks at a controlled temperature of 27-29°C for 12–14 days. Subsequently, the wine is aged in barriques for 12–14 months and for a further 6–8 months in the bottle before being released to the market.
The Cúmaro is characterized by a ruby red color with garnet hues. On the nose, it reveals a broad and intense bouquet of plums, currants, and morello cherries, enriched by pleasant notes of black pepper, vanilla, and tobacco. On the palate, it is soft and embracing, with polished tannins and a finish featuring a chocolaty aftertaste.
Perfect for pairing with red meats and game, it is ideal with aged cheeses.
