How it is produced
The grapes are harvested by hand in small crates between the second and third decade of October. After careful selection and destemming, the process continues with alcoholic fermentation in cement vats at controlled temperature. At the end of fermentation, the wine matures in large barrels for about six months, an essential wood aging phase to integrate the tannic structure and stabilize its complex taste architecture.
