Description

Contrada Diciassettesalme di Cottanera is a cru of Etna Rosso DOC, whose rows develop on lava-clay soil at about 700 meters above sea level, in the municipality of Castiglione di Sicilia.

100% Nerello Mascalese, after the manual harvest and soft pressing, the must macerates in contact with the skins for about 25-30 days at a temperature of 28 ° C, after which it undergoes a controlled temperature fermentation of 26-28 ° C with constant pumping over and punching down. The wine is decanted into French oak barrels where it performs malolactic fermentation and refines for a period of not less than 8 months.

Intense ruby red in color, hints of red forest fruits take shape on the nose, including raspberry, strawberry and blackberry. In a second moment it leaves room for herbaceous tones that recall mallow, thyme and juniper, with mineral returns. Tasting is complex, with well integrated tannins and a slightly balsamic finish of enviable length.

It is appreciated with all mushroom recipes and white meat sauces. It goes perfectly with semi-mature cheeses.
