What type of wine is it
Franciacorta Brut by Ca’ del Diavolo is made from a blend of Chardonnay and Pinot Nero grown on the morainic hills of Franciacorta. Created using the Traditional Method, it displays a fresh and balanced style thanks to fermentation in temperature-controlled stainless steel and bottle ageing on the lees for at least 18 months. The result is a wine with harmonious structure, a fine and persistent perlage, able to highlight the varieties of the territory and offer an immediate and versatile drinkability.
Where it comes from
This Franciacorta is born on the morainic hills south of Lake Iseo, in the province of Brescia, in an area historically suited for viticulture. The vineyards, located between 200 and 350 meters above sea level, grow on limestone-clay soils of glacial origin, with excellent drainage and presence of stones. The continental climate with significant day-night temperature shifts allows for a slow ripening of the grapes and develops intense aromas and balanced acidity.
How it is produced
The Chardonnay and Pinot Nero grapes are hand-harvested in crates at the perfect degree of ripeness and undergo gentle pressing. The must ferments in stainless steel at 16 °C to preserve aromatic freshness. The base wines are vinified separately by single vineyard and then blended to define the cuvée. The second fermentation takes place in the bottle according to the Traditional Method, with ageing on the lees for at least 18 months in cellars at constant temperature, providing aromatic complexity and a fine mousse.
Tasting notes
In the glass, it shows a bright straw-yellow color with a fine and persistent perlage. On the nose, white flowers, green apple, and subtle hints of bread crust due to maturation on the lees emerge, along with fruity nuances and slight minerality. On the palate, it offers a balanced structure, lively acidity, and a citrusy trail, with creamy mousse and a harmonious finish that maintains freshness and good length.
Food pairings
This Franciacorta is perfect as an aperitif and pairs well with fish dishes and white meats. It goes well with sushi, seafood crudo, lemon risotto, and sea bass carpaccio. In the Brescia area, it is a classic match with casoncelli alla bresciana with butter and sage. It is also excellent with vegetable tempura and gratin-ed seafood, thanks to its freshness and fine perlage which enhance the delicacy of the dishes.
When to serve it
This Franciacorta is best enjoyed young to showcase its freshness and perlage, but its structure also allows for a brief rest in the cellar. It is recommended to consume within 3–5 years of disgorgement to fully appreciate its aromas and vibrant palate. The ideal serving temperature is between 8 °C and 10 °C, so as to release its bouquet and offer a pleasant, refreshing drink on every occasion.
