Its base is created from a gentle pressing of the free-run must, accompanied by partial maturation in oak barrels and expert aging on the lees that refines its flavor precision.

Where it comes from

The grapes for this blend come from Bellavista’s finest plots in Franciacorta. The vineyards, featuring vines nearly thirty years old on average, ensure consistently high-quality fruit ideal for crafting an Extra Brut. This hilly Lombard area stands out for its careful viticulture, with a focus on selecting the best sites to guarantee freshness, natural balance, and a clear mineral character in the wine.

How it is produced

The hand harvest takes place between late summer and early autumn. The free-run must is extracted through gentle pressing to preserve aromatic purity. Secondary fermentation follows the Traditional Method, with aging on the lees for about thirty months. A portion of the base wines matures in oak barrels, while manual riddling completes a strict production cycle that is essential for ensuring structure and a long-lasting perlage.
