Description

The Franciacorta Extra Brut from the Lo Sparviere winery is obtained from manually harvested Chardonnay grapes in the municipality of Provaglio d'Iseo, grown on marl limestone-rich soils. The vineyards are located at an altitude between 150 and 200 meters, facing northwest, ideal for ensuring freshness and complexity.

The grapes undergo cooling at 4°C before gentle pressing, yielding no more than 50% of the free-run juice. After fermentation at 15 to 16°C, the wine matures on the lees in steel tanks and in small percentages in second and third-use barrels, with a bottle aging of 36 months.

In appearance, it is golden with fine and persistent perlage. The nose reveals bread crust, hazelnut, candied fruit, and spices. The taste is balanced, with decisive sapidity, freshness of cedar, and a mineral finish.

Perfect with fish dishes, white meats, or medium-aged cheeses.
