Description

Alma Non Dosato Assemblage is a Franciacorta without dosage produced by Bellavista, composed partly of Chardonnay and partly of Pinot Noir. The grapes come from selected vineyards in the estate's best parcels, with the vines having an average age of about 27-28 years.

Harvest is done manually between the end of August and the beginning of September. The free-run juice is obtained through gentle pressing and fermentation, which includes aging on the lees for about 30 months, with some of the wines aged in oak barrels to enrich the aromatic structure. The riddling is done manually, giving the wine complexity and sensory depth.

With a bright yellow color, it features a persistent perlage and creamy effervescence. On the nose, citrus and floral notes stand out with hints of thyme, Mediterranean herbs, and sweet spices. On the palate, it reveals itself as energetic and dynamic, with a crunchy structure and a balance between freshness and maturity that enhances the wine's complexity.

Ideal as an aperitif, it pairs well with fish dishes, shellfish, and fresh cheeses.
