Description
The Gavi del Comune di Gavi Cortem by Fontanafredda is a white wine that elegantly expresses the classic character of the Cortese grape, grown in the Lomellina locality, a picturesque corner of the far southeastern Piedmont. This territory, characterized by a rich geological and scenic variety, is particularly suited to viticulture thanks to the presence of white clay marls of marine origin, which give the wine freshness, complexity, and remarkable longevity.
The handpicked grapes are gently whole-pressed, preserving the skins as much as possible. The resulting must is cooled and statically decanted before low-temperature fermentation in stainless steel. This is followed by a 2-3 month refinement, also in stainless steel, during which the wine stays in contact with the fine lees, enriching its structure. The process concludes with cold stabilization and bottling in the spring.
The wine presents a straw yellow color with greenish reflections. On the nose, it offers an intense bouquet with floral and citrus notes, including acacia flowers, lemon, lily of the valley, and green apple. On the palate, it is dry, full, and savory, with a good structure that enhances its balance and lingering taste.
It pairs well with raw fish, light fried dishes, seafood risottos, vegetable soups, baked or grilled fish, and delicate white meats with lemon.
