Description
The Gevrey-Chambertin produced by Labouré-Roi is a rich and velvety Pinot Noir, grown in the vineyards of the communes of Gevrey and Brochon, in the northern part of the Côte de Nuits, at altitudes between 280 and 330 meters, on limestone and marl soils facing east and southeast, with gentle or steeper slopes in the Premier Cru.
The grapes are hand-picked and manually selected upon arrival at the winery. After complete destemming, cold maceration lasts 5 days at 8°C, followed by 12 days of fermentation with two daily punch-downs at 33°C. The wine ages in Burgundian barrels, 20% of which are new, to express complexity and structure.
The color is a deep red, similar to black cherry juice. The bouquet is powerful, with notes of wild dark fruits, spices, and wood. The sip is structured yet velvety, with silky tannins, a nice concentration, and a perfect balance of intensity and finesse.
Ideal with guinea fowl, game such as pheasant or deer, beef stew, grilled meats, and regional cheeses like Époisses, Cîteaux, and Amour de Nuits.
