Description
Privilegio by Feudi di San Gregorio is a refined passito obtained from Fiano grapes, an expression of the winemaking tradition of Irpinia. Its production follows a careful process of natural drying, which concentrates aromas and sugars, giving the wine extraordinary richness and complexity. A sweet wine with a strong identity, capable of surprising with its balance between softness and freshness.
After the harvest, the bunches are placed in small crates and left to dry in a ventilated environment for eight weeks, until the perfect sugar concentration is reached. Fermentation and maturation take place in barriques for 6-8 months, followed by a bottle aging of at least 12 months, which enhances its structure and harmony.
In the glass, it presents a crystalline golden yellow color. The bouquet is enveloping, with intense notes of dried apricot and small white flowers. On the palate, it is silky and smooth, enriched by a vibrant acidity and delicate minerality. The finish is long and persistent, with hints of candied citrus peel, cinnamon, and white peach.
Perfect with cream-based desserts, it also pairs magnificently with aged and blue cheeses.
