Description
Ally Bay is a white wine made from Sauvignon Blanc grapes grown on limestone soils, located between 600 and 800 meters above sea level, with a specific selection of vineyards at 750 meters. The yields are limited, contributing to a more intense and concentrated expression of the grape variety.
The winemaking process involves cryo-maceration at 10 °C for six hours, followed by a static cleaning and fermentation at 18 °C. This technique allows the preservation of the grape's primary aromas, resulting in a balanced and aromatically rich wine, with good definition and freshness.
Visually, it appears brilliant, with a light straw yellow color. On the nose, it offers medium aromatic intensity, with notes of white flowers, tropical fruits, and slight hints of honey. On the palate, it is well-balanced, harmonious, with a smooth and fresh sip that invites drinking.
Perfectly pairs with shellfish, raw seafood, or light dishes based on salads.
