Description

The Langhe Nebbiolo Giblin by Ca 'Viola is produced from pure Nebbiolo grapes, coming from a single parcel of about one hectare, located in the Montelupo vineyard, on a soil of gray silty marl alternating with yellow-reddish sandstone, with southern exposure, southeast.

The must obtained from the pressing of the berries ferments with indigenous yeasts for 15 days in steel tanks with temperature control. The final phase of maturation takes place in cask for 15-17 months.

It announces itself to the eye with a color that recalls the shade of ruby crossed by garnet reflections. The range of notes that develops on the nose traces a broad and complex profile, with notes of berries and wet earth. On the palate it is elegant and austere, with velvety tannins and a fruity and satisfying finish of great persistence.

To be combined with game-based preparations, it is perfect with aged cheeses and stewed meats.
