Description
Nebbiolo di Rattalino comes from more than 30 years old vines, located in the municipalities of Montà, between 280 and 320 m asl and from a strongly sandy soil, which gives the wine a sapid and mineral character. After a cold maceration of the grapes in boxes for 5 days, the vinification is carried out in steel tanks for 7 days. The fermentation temperature is controlled and maintained around 25 ° C. Malolactic fermentation takes place at the end of fermentation and completed racking. Finally, it ages for 5 months in steel tanks and 2 months in the bottle.
Fresh, soft and elegant wine. The color is presented in shades of ruby red with reflections that tend to purple, while the nose is gentle, with its hints of violets, rose hips, cassis. In the mouth it is mellow, generous, easy to drink and with a pleasantly enveloping finish.
A wine that perfectly marries any type of filled pasta, such as agnolotti del Plin. Definitely try it with game and with a platter of hard aged cheeses.
