Description
The Marche Rosato Occhio di Gallo of Villa Forano was born in vineyards located on the hills of Appignano, in the province of Macerata.
It is produced with Montepulciano and Sangiovese grapes, selected and harvested by hand during the first ten days of October. The destemming-crushing is followed by a first fermentation on the skins at a controlled temperature of 12-14 ° C and a second fermentation phase without skins at a constant temperature of about 18 ° C, both carried out in stainless steel.
The Eye of Rooster has a cherry color with light purple reflections. The bouquet ranges from floral to fruity notes, with hints of cyclamen, plum and small fresh red fruits such as raspberry and blackberry. On the palate it is very pleasant, with a decent structure and good freshness.
Perfect to accompany appetizers with cured meats and aged cheeses and structured first courses, it is ideal in combination with red fish soups, second courses with white and red meats and fried food.
