Description
Cascià Passito is a sweet wine produced by Fontezoppa in the territory of Serrapetrona, obtained from Vernaccia di Serrapetrona grapes grown at about 450 meters above sea level; it comes from an area renowned for the production of wines with great character and represents an intense and refined expression of the Marche tradition.
The winemaking process involves natural drying of 100% of the grapes for around three months, followed by whole-cluster pressing and fermentation at controlled temperature with prolonged maceration on the skins; the wine then ages in the bottle for about a year, developing aromatic complexity, structure, and harmony.
It shows an intense and deep red color; on the nose, it reveals enveloping aromas of ripe red fruit, jam, and spicy notes, with subtle balsamic hints; on the palate it is rich and velvety, with a sweetness balanced by vibrant freshness and a delicate tannic structure that supports a long and persistent finish.
Perfect paired with dry pastries, dark chocolate, and blue cheeses, creating a harmonious balance between sweetness and structure.
