Description
The Marsannay from Labouré-Roi is a generous and expressive Pinot Noir, with vineyards extending between 255 and 390 meters in altitude in the municipalities of Chenôve, Marsannay-la-Côte and Couchey, on very varied Jurassic soils.
The manual harvest is followed by a selection in the cellar, complete destemming and cold maceration between 8 and 10°C for 4-6 days. After 12 days of fermentation in steel with two pump-overs and two punch-downs per day, the wine ages in barrels in contact with the fine lees.
The color is deep ruby red with garnet reflections. The bouquet is intense, with aromas of cherry, black currant, strawberry, and almost jam-like blueberry. On the palate, it is rich, concentrated, fruity, and round, with an enveloping generosity.
It ideally accompanies red meats, steaks with shallots, lightly marinated game, freshwater fish, grilled vegetables, or washed rind cow cheeses like Époisses and Munster.
