How it is produced

The production process begins with manual harvest accompanied by careful selection of the bunches directly in the vineyard. The must, obtained through gentle pressing and light settling, ferments in French oak barrels, some of which are new, and relies on indigenous yeasts and bacteria. Aging on fine lees continues for eighteen months without bâtonnage to preserve aromatic clarity. The final stage involves racking into stainless steel before delicate bottling, timed according to the lunar calendar cycles.
