What kind of wine is it?

Montagny 1er Cru Montcuchot from Domaine Cottenceau is a dry white wine from the Côte Chalonnaise made from Chardonnay. The winemaking process includes spontaneous fermentation with native yeasts in French oak barrels, followed by a period in stainless steel tanks. On tasting, it stands out for its medium body, juiciness and roundness, with vibrant freshness and a chalky minerality recalling citrus and white fruit.

Origin

It is produced in Buxy, in the Côte Chalonnaise, from grapes grown in the Montcuchot vineyard. The southeast exposure and steep slope contribute to the balance of the fruit. The limestone soils, rich in fossils, are reflected in the mineral sensation and chalky notes on the palate. Vineyard work follows organic practices, focusing on interpreting the terroir.

How it is made

The grapes undergo a gentle pressing, after which fermentation starts spontaneously with native yeasts. The wine ferments in French oak barrels, 50% of which are new, and ages for 14 months in the same casks, followed by a further 6 months in stainless steel tanks. This choice helps preserve purity and aromatic expression, integrating the wood component without losing precision.

Tasting notes

On the nose, yellow flowers, quince, crushed stone and lemon zest are recognizable, with a hint of warm wood in the background. The palate offers a medium, juicy and enveloping structure, with notes of citrus and white fruit. The finish remains crisp thanks to the chalky minerality and persistent freshness supporting each sip.

At the table, it naturally pairs with freshwater fish, where freshness and minerality complement the delicacy of the flesh.
