How it is produced
The manual harvest takes place between the end of September and the beginning of October, ensuring a careful selection of bunches. In the cellar, after destemming and a very gentle pressing, the must undergoes alcoholic fermentation at a controlled temperature of 28 °C. This is followed by a fifteen-day maceration on the skins to promote the correct extraction of color and tannins, accompanied by malolactic fermentation. Before being released, the wine matures for ten months in steel and continues its evolution with a further bottle aging period of six months.
