Description
Preda del Falco by Tenute Baldo is a tribute to the power and elegance of the Sagrantino grape, a symbol of Umbria. Born from carefully selected grapes in the Montefalco area, this wine expresses the most authentic essence of the territory, with an imposing structure and extraordinary aromatic complexity.
The winemaking process involves double selection of the grapes and hand harvesting, followed by spontaneous fermentation at controlled temperature. The submerged cap maceration for 30 days allows for the best extraction of color, tannins, and aromas, while the malolactic fermentation in steel gives greater harmony to the wine. The aging unfolds in three phases: 18 months in large French oak barrels, 6 months in barrique, and a final period in steel on fine lees, before further resting in the bottle.
With an intense and impenetrable ruby red color, it opens on the nose with balsamic notes of herbal medicine, followed by hints of plum jam, blackberry, and dark spices. Nuances of rhubarb, bitter orange, and pine resin emerge, adding further depth. On the palate, it is sumptuous and enveloping, with vigorous and well-integrated tannins, extraordinary density, and monumental persistence.
