Oltrepò Pavese DOCG Metodo Classico Pinot Nero Pas Dosé Cuvée 'More Castello di Cigognola

The sparkling wine 'More by Castello di Cigognola was born in Oltrepò Pavese from a red grape typical for this area, Pinot Nero. The Castle, which overlooks the Scuropasso valley, has belonged to the Arnaboldi, Brichetto and Moratti families for generations in the mid-fourteenth century. Since 1981 the farm has been managed exclusively by the Moratti family.

After the grapes are harvested, the whole bunch is pressed and fermented with selected yeasts at a controlled temperature. The wine ages on the lees from 18 to 24 months.

This Blanc de Noir appears in the glass of a brilliant straw yellow colour, with a fine and persistent perlage. On the nose there are hints of flowers and red fruits. The sip is pleasantly fresh and silky.

The sparkling wine 'More is perfect as an aperitif and goes very well with warm seafood appetizers, risotto alla marinara and white meats.
